Harvest hash is something I came up with when I was trying to use up veggies in the fridge so they wouldn't go bad.
1 large sweet potato
1/2 red onion
1 can green peas
2TB olive oil
chop sweet potato into 1/2 inch cubes
Dice your red onion
Drain peas (thaw if using frozen)
In a skillet on medium heat add about 2 Tablespoons of olive oil and you sweet potato. cook for about 12-15 minutes or when the potatoes become aldente'
add your red onion and cook until the potatoes and onion are soft then pour in your green peas to heat them.
Add a little salt and pepper to taste and there you have it, Harvest Hash!
