1 Head of cauliflower, cut into flouters
1 Cup of mushrooms, quartered
2 Tabespoon olive oil
pasta, fetticini or spaghetti style (glutano gluten free pasta)
5-6 strips of bacon, chopped ( low sodium, thick cut)
1 clove of garlic, chopped
salt and peper, to taste
1/2 Cup of parmesan, grated
1 Tablespoon parsley
1 Put your cauliflower flouters and quartered mushrooms in a bowl and drizzle with the olive oil. Mix the veggies, coating them evenly with oil.
2 spread out the veggies in an even layer on a baking sheet, add a little bit of salt and put in a 400F degree oven for 20-30 minutes
*Start cooking the pasts as directed on the box
3 In a skillet add your chopped bacon, once it's cooked pour off all but 2TB of grease
4 add your garlic to the bacon and cook on medium low heat for about 30 seconds then turn off the heat.
5 once all components are done, toss them all together adding the parmesan and parsley and add salt and pepper to taste.
This is a quick and easy dish to prepare that won't cause you to blow all your hard work or your budget. Add a salad on the side as well. Its also good for those who have food allergies to gluten, and eggs.
