Pesto spegehtti and meatballs is a perfect substitute for the traditional. You have a sauce, meat and pasta. This is something very simple I came up with, and I hope you all like it.
Lean Ground Turkey (1 lb)
Feta Cheese (1/2 cup)
Red Onion (1/2)
Minced Garlic (2 Tablespoons)
Salt & Pepper
Gluten-Free Pasta ( I used Gluttino gluten free enriched pasta, spaghetti style)
Pesto Sauce ( I used the packet that you add olive oil and water to)
Chop half a red onion, mince 3 cloves of garlic and throw in a bowl with ½ cup of feta and a pound of ground turkey.
Season to taste, mix and roll into balls.
On the stove, put some olive oil in an oven safe skillet and brown meatballs on all sides. Once browned throw in the oven on 350 for about 15-20mins
For the noodles and pesto follow instructions on the packages.
One your pasta in done and drained, add the pesto sauce and coat the pasta. I like to add a couple of tablespoons of parmesan cheese to the noodles a well.
Put the pesto coated noodles in a bowl and top with your meatballs and you're ready to dive in fork first.
