The trip up to Mississippi is a 14 hour drive. Eating on the road only became problematic for breakfast. I was able to snack on healthier choices like cuties, nuts and low fat low sodium chips. For breakfast, I ordered an egg white sandwich ditched the bread and ate the egg and meat. For lunch and dinner there are of course more options so it wasn't difficult to stay on track.
On Christmas day I did have some dressing and a thin slice of pound cake, but everything else on my plate was not heavy. The days leading up to christmas I ate out with cousins and made sure to order dishes that were lighter in portion, grilled or baked meats and corn was used instead of flour. A couple of days I cooked for my cousins and myself to be able to save some cash and also have a lighter but filling meal. Just because my cousins loved it so much I'm going to share with you what I prepared. It really takes no effort at all and everyone will love it thanks to Grill mate and McCormick marinades.
I made roasted red potatoes, pork loins and broccoli.
for the chops, I cleaned them then threw them in a bowl with some garlic, about a 1/4 C of olive oil, and zesty herb grill mate marinade (the white wine garlic herb is really good too) and coated the meat. Let it sit until you're ready to cook. I chose to cook them onto of the stove since we were super hungry at the time, but you can also bake them in the oven and your potatoes will be done the same time.
The potatoes were just as easy. Slice your red potatoes in to small wedges by quartering them. Toss them in olive oil and McCormick herb marinade, (I used roasted potato and chicken pack) and once they're evenly coated, throw them on a cookie sheet and bake on 400 for 45-50 minutes. Add any veggie to the meal for balance. Super simple and super tasty!

All in all I gained 2 pounds, and I'm ok with that. I didn't feel restricted and I didn't over stuff myself. Christmas break was the best one yet this year. I hope you all enjoyed yourselves and made healthy choices. Happy New year!
