So, This cheese recipe I used for the platter went untouched for a while. It does look a lithe intimidating especially if you're like me and you just stick to what you like. (I'm slowly coming out of that) But when I tell you afar my mom's guest tried it, it became the only one they wanted to eat.
Here's what you need for the Caramelized Pear and Gruyere Torta
1 Tablespoon unsalted butter
1/4 Cup sugar
2 Bosc Pears
2 8oz Nehfchatel cheese, softend
1 Cup grated Gruyere cheese
1/2 Cup chopped pistacio nuts
** you will also need a small pan or bowl and some plastic wrap
In a skillet melt butter over medium high heat, stir in sugar and chopped pears and cook for 12-15 minutes until the pears begin to caramelize. remove from heat and let cool completely
In a bowl beat together (with mixer) Neufchatel and Gruyere cheese until fluffy and well combined.
Line a 4 inch cake pan or bowl with plastic wrap and spoon in half the cheese mixture for the base. Then pour in half the pears. (before i pour the pears I like to sprinkle a little of the nuts). Spread the rest of the cheese (a few more nuts) and put in the fridge to chill for a couple hours.
Once you remove it flip it onto a plat/platter/serving tray and remove the plastic wrap. Use the remainder of the nuts to coat the sides and pour the rest of pears on top. Voila!
I served with two different kinds of water cracker. This cheese packs a lot of flavor so the cracke needn't be much but a vessel.
The awesome thing about using the minute to win it games is that you can use things you already have in your home. Everyone loved the games, so much we're talking about another game night. I think this one reds to be "old school vs. new school" though.
